Slow again, and I thought I should post about the culinary creation from yesterday.
Okay, so I was craving Mac and Cheese and tried to make something similar.  Turned out pretty good.  So I'm gonna call this my McCheesy Creation.
Okay so I started out with cooking noodles.  I used a whole wheat noodle, I believe they were of the Penne varitey, you know the ones that look like mini manicottis.  Anyway,  I cooked up what was probably two servings of these noodles which would come in totaling 6pts.  
Then to create the cheesy goodness.  This is were I could of used some help, but it worked out pretty good.  Get the 2% milk shreaded cheddar cheese, use about 1/3 cup., which is like 2-3pt.  6 cubes of the laughing cow light swiss cheese - for 1 pt.  1 slice of the fat free kraft american cheese, this is 1 pt.  Some fat free plus milk.  I'm guessing I might of used 1/4 cup so that might be 1 pt.  So that's 6 pts for the sauce.
Then to add some volume and nutrition to it.  I microwaved a bag of chopped brocoli and cauliflower and threw that in with the cheese and noodles.  Plus, cause I love onions and garlic.  I sprinkled in garlic powder and chopped up an onion and threw that in with the cheese.  Next time I do this cook onions first then throw cheese in and make the sauce.  Then the noodles and veggies. 
This creates like two servings at 6 pts. each.  They are pretty heaping plates.  Sprinkle with some Parmesan Cheese and it's pretty yummy.
